Nan
- 150 grams self raising flour
- 1/2 tsp baking powder
- 1 tsp yoghurt
- 1 egg
- 1/4 tsp salt
- 1/4 tsp sugar
- 1/2 tsp ghee
- 100 ml milk
- 1/2 tsp khandari (fried onion powder made into a paste)
Method
- Mix all ingredients together and leave to settle (overnight!).
- Cook in clay oven
We didn’t actually make the dough as it needs a long time to settle, so I can’t comment on that other than to note it seemed to have actual onion seeds in it too, which aren’t mentioned in the ingredients list.
The oven is pretty cool. Roll out the dough into a slat chapati shape. Shape it onto what looks like a tea towel wrapped around some dome shape. Dab some water onto it to help it stick to the inside of the oven. Use the tea towl dome to place it in the oven, patting it onto the sides. Dip your hand and upper arm in water as it will be hot.
If you’ve making a bigger nan than your shaper, let it hang vertically and pat it all into place.
If you don’t have a big clay tandoor oven, do not despair; you may borrow mine.
If you do not live near me and/or can see through my lies, there is another option. Use a bit hot plate over your gas stove. Cook the nan on one side for about 30 seconds, then grill the other side. It should rise up properly and be pretty good.
