Indian cookery episode 7, George Lucas sucks

Chicken Jalfrezi

  • 1 tsp garam masala
  • 1 tsp ground coriander
  • 1 tsp ground cumin seeds
  • 4 tsp fenugreek leaves
  • 1/2 tsp red chilli powder
  • 1/2 tsp tumeric powder
  • 500 grams small pieces of chicken
  • 5 dstspn vegetable oil
  • 1 medium onion, chopped
  • 3 medium tomatoes, chopped
  • 2 dstspn garlic puree (6 cloves?)
  • 1 dstspn ginger puree
  • 1 green chilli, chopped
  • 2 eggs
  • Handful chopped fresh coriander
  • 1 tsp salt

Method

  1. Heat oil, fry onions until light brown
  2. Add the garlic and giner and cook for 5 mins on a medium heat
  3. Add 2 of the chopped tomatoes
  4. Add the ground coriander and cumin, fenugreek leaves and salt. Cook for a few minutes then add the tumeric powder and red chilli powder. Cook for 5 mins on a low heat
  5. Add the chicken and cook for 10 mins
  6. Whilst chicken is cooking, heat more oil in another pan until very hot. add tumeric and cook for 30 seconds. Add the 2 beaten eggs whilst mixing, and fry for a minute or so. Keep it moving as not to let it stick and burn.
  7. Add the scrambled egg, green chillies and the 3rd tomato. Cook for 5 mins on a high heat. keep stirring.
  8. Add the fresh coriander, stir and cook for a few mins.

If you’re lazy you can just add the beaten eggs direcly into the main dish at some point, but this is apparently the best method.
